The “Post Update” button is becoming invisible indeed, if you select to also share a photo, video or link.
If you add a photo for example though, and click on the “Add photos” button, then the post should get published including any text message.
I’ve already tested that, here’s a quick demo:

As you will notice in the screencast, in order to see the initial post you should also refresh your page. After that, you should see next posts directly.

Thanks so much for the response! Appreciate it! Ahhh… I see… the lack of a post update button and familiar language is causing confusion. “Add” Photos, Links, Videos sounds like you’re wanting to add more to the individual post, so there’s no longer language that makes it seem like you’re actually going to “Post Update”. Fewer people are using it now on my site. Would be great if it could read “Post Photo”, “Post Link”, “Post Video” to avoid the confusion and let people know it’s the final step to post.

Changing these labels should be as easy as translating the actual plugin and use your own strings instead.
You can do that by opening
/wp-content/plugins/buddypress-activity-plus/languages/bpfb-default.po
with a program like PoEdit https://poedit.net/
Make any translation changes you wish and save these as
bpfb-en_US.po
and
bpfb-en_US.mo
Finally, upload these files in
/wp-content/languages/plugins/
