How are you adding the tracking information to your WooCommerce orders?
Also, in which order status email is the tracking info missing?
One more thing — are you using any email customizer plugin (such as Kadence, YayMail, etc.)?
Some customizers override the default WooCommerce email templates, which can hide the tracking widget.
