Not working as expected

I’ve used AAM a fair bit before, but for some reason on the site I’m developing at the moment, it seems to working ‘backwards’.
The aim is to restrict a user to only edit certain pages. So, I’ve created a role and added the user to that role. I then configure the role by going to Posts & Pages, and then configuring the default access for Pages to disable everything. That works just fine – the user can’t see any pages or add any either.
So then I want them to be able to see 4 particular pages. So I drill down to each page, and reverse the default settings being inherited from the Pages root. I would now expect the user to be able to see & edit those pages, but they still see nothing.
When I say ‘backwards’, if I do the opposite of what I want to do then it appears to work. So leave the default access for Pages to allow everything (works fine, they can see & edit every page, and add new as well) and then block access to a specific page or pages – and voila, they disappear from the list of pages the user can see.
But I don’t want to have to configure the access on 58 individual pages for each role I create – that’s how the default access thing should work right? Well for some reason it’s not.
