When I edit a post that was published before the plugin was installed, notifications are sent to the subscribers whether I want that or not. Is there a way to fix that? Like, could I somehow disable sending before I republish a post?

That should not happen. If the post is published before STC was ever installed, they should not be sent through STC unless you go through a cycle of taking it to draft and publishing again. That would indeed trigger the send email notification. Because it is seen a newly published post.

If you did not do that something else might be wrong and I need to look at your settings and look at your posts on the admin level. For that I need admin access. Please sent username/password and the link to the login account page to [email protected] so I can be of assistance.

But why would you republish you can update an old post without repubishing just hit the update button and in that case it should not trigger STC

I need to understand where the custom post are created. STC has a special patch to take care of ‘ad_post’

STC version 2.5.2 gives now the possibility to prevent an email notification send by means of a “Do not mail this blog” checkbox at the publish side bar. This works for the Guttenberg and de Classic editor.
