It sounds like the featured image may be too small for one or more required image sizes. See the SSO notifications in the top admin toolbar when editing that post/page. You can also adjust image sizes under the WordPress Settings > SSO Image Sizes page.

Thanks JS, what is the minimum required image size? I couldn’t find it on my own – I apologise. the current image size is 858×516.
Also, are you aware that the SSO plugin skipped over the Featured Image? It wasn’t Facebook skipping over the image, it was the plugin.
Btw, I don’t think I saw any notices from SSO.
And I apologise for all of the edits to this reply. I am trying to troubleshoot this issue myself and updating this reply as I find more information.

If the SSO notices are not appearing, you may have a jquery issue – the browser stops processing jquery if an error occurs. You can enable the console in your browser to check for jquery errors.
Under the SSO > Advanced > Plugin Behavior tab, change the “Notification System” to “WP Admin Notices” to use the native WordPress admin system.
You can also adjust image sizes under the WordPress Settings > SSO Image Sizes page.
The OG image should be at least 1200x630px. WPSSO includes a lot of Quality Assurance features to make sure your markup is as good as possible, which includes image sizes.
See the SSO > Setup Guide for more information, including information on optionally upscaling images (although uploading larger images is preferred).

Just an FYI, I increased the width to over 1200px, and the plugging is now working as expected.
