After the restoration has completed there should be a notification on your dashboard with a button to delete them as per this screenshot.
You can’t prevent them from being created as UpdraftPlus creates these directories to give a ‘last-chance’ backup point in case the restoration fails – they contain the files needed to manually restore the site back to its original state.
im not able to check our screenshot, its redirecting me to an error page.ERR_QUIC_PROTOCOL_ERROR
can you please resent it or show me the screenshot on a different way?

as you can see on the screenshot, After the restoration has completed, there is no button to delete “old” folder / files.

Please take a look at this link on some troubleshooting steps to help solve the “too many redirects” issue.
You could start with renaming your plugins folder to temporarily de-active all plugins and allow access to the admin dashboard.
In terms of the button to delete old folders it will be available on the UpdraftPlus >> Settings page at the top.
