I hope you are doing well. You need to use either Essential Blocks or Single infobox plugin.
Here I have checked with the blocks and the single infobox plugin separately, getting all the background colors working perfectly. Have a look here – https://d.pr/i/pvqRnM
Could you please check the single plugin and blocks advanced option for the background color and let me know how it goes now?

If I wanted to create a 3×4 grid of info blocks, what is the best way to go about that?

Here I am sharing the way in which you can set infobox as a 3X4 grid.

1. You can use the Gutenberg default column for the 3X4 grid
2. You can use our Essential Blocks plugin which has ROW and set as you mentioned.
