    hi HypnosisDerby,
    the plugin keeps track of both the shipping date that code and carrier, of course you may also set a generic name that does not correspond to an actual carrier in the settings of the plugin.
    As for the setting of multiple shipping dates, it is a feature not provided in the current version that we may consider in the future.
