How do I set up pagination to show older posts? Does this change this links on the same page or bring you to a separate page with older posts? I’m not sure how this works.

You can use shortcode parameters to remove the pagination from your posts.
Please these shortcode parmeters.
Please also see: Display Settings
You can change the display settings for Pagination to show “Older” or “Newer” posts.
