You should ask GD about that :).
Before you delete anything, copy the entire theme folder to your local computer – that way you have a backup copy of it – and that should enable you to replace anything that gets deleted. Theme settings/options should be saved in the database – hopefully you used Custom CSS (like I said modifying theme files isn’t a good way to go)!
I did – always do custom CSS. I’m such a knob for trying to modify the functions file. I’ll do your recommendations and go pour myself a glass of bourbon before doing anything else.

Evidently, you have to be smarter than the computer – I didn’t see the scroll to other pages tabs. As soon as I did, I did exactly as you said and replaced the functions.php file. It’s working and perfect!
