Payment authorized and completed Hooks

Are there any hooks that I can use to check when a payment has been authorized and completed?

Also, it seems that the amount captured is not stored in the database along with the otehr details. I think this would be most useful for referencing if the order changes after this. Is there any way to get this info from a hook or somewehere else without relying on the order amount?
