Payment method bug in manual orders?

Hello there,

You can select the default payment method by going to WooCommerce → Settings → Payments and then be sure to drag your preferred payment gateway option to the top.

Be sure to log out from your site, then log back in, to make sure the change will be visible.

is there a way to filter the payment methods that appear on the order-pay page taking into account the method chosen through the manual order ?

There isn’t a built-in way to restrict payment methods for manual orders only. You may want to look into using a plugin like below to add such a feature to your site.
