Yes, you are correct, Permalink Tweaker only removes the category base /category/ which WordPress puts in by default.
What you are suggesting is siloing your content (which you can do with our wordpress framework ), but not SEO Ultimate.
Siloing will allow you to get the depth of the silo keyword “product” > then category “category” then > supporting article “product-name” as you suggest, but will also prevent them from cross linking. So, only items from a product “silo” would link within that silo.
However, it’s built into the framework, but, you could create your own templates/designs.
