PHP Files Ruining Everything!

I’ve been operating WordPress sites for about three years now, and have normally been able to sort every little problem by reading these forums, but this new issue I just cannot explain – your help would be greatly appreciated!! 🙂
Basically, I’ve installed a new theme, and sometimes when I modify a .php file, no matter what I do it breaks the entire page. Like, I literally open it, do nothing, save it, and the page breaks. For example, I attempted to remove an inbuilt sharing feature, so I edited the php file (it’s like 3 lines of code), re-uploaded and the page was destroyed. No content, just the header and footer. No biggie, just re-upload the original .php file right? WRONG, page is still broken. In fact, everything I try short of reinstalling the entire theme does not fix it, and obviously I don’t want to keep reinstalling the theme. All caching is turned off atm, so no issue there.
Bizarrely, this only happens on some .php pages. I can usually edit them no problem, but occasionally it just breaks the page, and them I’m stuck because re-uploading the original, or even the entire folder just does not fix it?
So my question: Does anybody know why on earth this would happen, and how to avoid or prevent it? Could this possibly be a permissions thing or something?
