That’s a great question. Our core has included Flowplayer v6 since 2015/07/09, so more than two years now. I’ve fixed the documentation to refer only to v6.
We are about to move to Flowplayer v7 this month. We delay the transition a bit (would have liked to have done it before the summer to be honest) to allow our users to avoid the huge new version bugs. You’re right though – it’s time to move to 7.

So if I purchase the Pro license and start adding a few videos on my site, will it be a massive process when you upgrade to v7 or is it seamless, just upgrade plugin via WP and that’s all?

The license key will change but our player should handle that automatically, so the update should be as seamless as a regular plugin update.
