Sorry that you ran into issues here!
500 errors usually mean that there’s some fundamental issue with your hosting or the PHP version. The fact that it works if you run a basic conflict test (2019 theme + no other plugins) means that it’s probably underpowered hosting, but it’s quite possible it’s something else.
To make progress here, I’d need to know a bit more:
– What version of WP?
– What version of PHP do you have installed? (We support 5.6 and higher, recommend 7 or higher)
– What does your hosting error log say when the error happens?
– Are you on shared hosting?
– What precisely are you doing to make the issue happen? Detailed steps would really help me understand the issue more clearly.

To answer your questions –
Wordpress Version is 5.2.1
PHP is 7 (tried 5.6 and 7.1 but it made no difference.)
Hosting error is blank – oddly
The site is on shared hosting, hostgator shared hosting.
The issue happens if I enable images for the listings. If I disable images it works – if I enable images I get the 500 error. This was working fine (and had been for over a year) till the last updates a few weeks ago.

Shared hosting can cause a variety of problems and they don’t always happen predictably…

But to further dig into this, I would recommend a conflict test.

My guess is that some other plugin you’ve installed is consuming too much in the way of your PHP thread time or database bandwidth (most likely the former)
I’ve already done conflict testing, before coming here as that was my first instinct, that some interaction was leading to the issue.
I also edited the php.ini and raised the processing time from 30 to 300 in case that was part of the problem – the issue remained, it made no difference at all.
This occurs with no other plugins active, and using the default (2019 theme) so it’s not an issue with another plugin as far as I can tell – and it only started after the last WordPress.
The site is also in it’s infancy, only has about 100 listings at this time, so it’s not as though it’s drawing on server resources in a big way.
