The option set is not lining up properly. There should be a hard return for each new option. I would also like them to be in order.

That’s a theme/CSS issue. Try using Firefox with the Firebug add-on for this kind of CSS work.

you can also use the filter eshop_option_set_ordering to amend the order. The default is ORDER BY type, id ASC.
