Is there a way to have the Events widget group the events by date rather than a different entry for ear event?

actually, there is now in 5.1.8.3, see Events > Settings > Formats/Layouts > Event formats

That seems to change it on the EVents page, but not on the Widget.

I tried changing EVENTS PAGE GROUPING setting.

we don’t have that on the widget yet, but you could try something like http://ww.wp.xz.cn/extend/plugins/shortcodes-in-sidebar-widgets/

and then use [events_list_grouped]
