So to confirm, the plugin itself stores no user data in the WordPress Database or any cookie apart from ‘ytprefs_gdpr_consent’? GDPR is a nightmare, so I have be sure.

You’re correct. And FYI, the cookie is only used for GDPR consent to make sure no YouTube.com assets are loaded unless consent is provided.
If you ever choose to deliberately sign up for the vi ad revenue feature, your users are similarly prompted for consent before any vi ads are shown (via the GDPR/IAB-approved consent policy for ads https://github.com/InteractiveAdvertisingBureau/GDPR-Transparency-and-Consent-Framework ).
