Possible, yes. Easy, no.

Your options are to get your subscribers to ‘Register’ with your blog and you can then get their names etc. Or you can edit the subscribe2 code to collect the data too, you’d need to add a field to the form, process that data when it’s submitted and then amend the database table structure to store the information. Finally, I expect you’d need to code a way of retrieving and displaying the data too.

That’s quite a bit of coding effort compared to getting them to register.
