Strange – I had seen this issue with one of my pages in the dev server where I was not able to select more than six categories. When I try the same page today and add a Posts Grid or Posts Block instance to the page, I was able to select any number of category/taxonomy terms without issues and save the page and retrieve/edit the same without issues.

Can you pls create a new page and see if the issue gets resolved by any chance?
We also checked the Elementor plugin to see if there is anything there which restricts the number of items that can be selected in the SELECT2 box. We could not find any code/config there which restricts the select2 box.
