Sorry to hear about the trouble you are having. Could you please provide us with more details to what issue you are seeing when trying to edit the product and Hummingbird active? Any specific error shown? Here are also a few things to try:
– Enable debug.log mode in wp-config to check for any relevant errors. See this guide: https://premium.wpmudev.org/blog/debugging-wordpress-how-to-use-wp_debug/
– Make sure that if Asset Optimization manual mode is active, test by checking for any core asset files that are optimized and disable their optimization
– Clear all caching on site and server(if set)
– Run a conflict test by deactivating all plugins except WooCommerce and Hummingbird and enabling a default theme like twentytwentyone. If the issue is gone, activate theme and plugin at a time to check for possible conflict.
