1. It is possible to have products which require quotes as well as products which are payable on the site while the plugin is active.
2. However, please note that it will not be possible to add products which require quotes and ones which don’t at the same time to the cart. This is due to the fact that no payments are taken at Checkout for products which are quotable.
3. Currently, it is not possible to setup products as quotable by category. However, you can enable/disable the feature for all the products on the site in one go by using the settings in WP Dashboard->Quotes.

Let me see if I understood.
If I disable the feature for all the products on the site, at once, by using the settings in WP Dashboard->Quotes, it will permit to have, at the same page, products with price (to be bought) AND products with no price (to request a quote).

They developed a plugin for this purpose. It has, too, a filter
“Você está vendo produtos para: ( ) Compra ( ) Orçamento”
Translating: Your are seeing products for: ( ) Buy ( ) Request a Quote

Yes, if you wish to have quotable as well as non-quotable products in the Shop, please disable the Quotes setting in WP Dashboard->Quotes.
You can then enable quotes for the desired products by editing the products individually. The settings for the same are present in Edit Product->Product Data->Inventory
Yes, the page link you’ve shared above shows both types of products.
