WPO does not offer cookie bar functionality so I don’t think this is something I can help you with.

I guess what I am saying is how do I know what cookies to exclude from caching? Tge plug-in has one default but is that a catch all? Is there a way to identify the cookies my site uses and thus set them as not to cache?

I am using chrome.
Co to the “Network tab”
On the left hand side, under “Storage” click “Cookies”
Then click on your site and the cookies should be listed on the right hand side
