Thanks for reaching out @giorge283. I checked your site and I can confirm a valid Site Kit snippet placement for Google Analytics. I also performed some additional checks and I can also confirm that events such as add_to_cart are firing (screenshot). You can check this yourself using the tagassistant.google.com service.
What may be happening, given you have a consent management plugin active, is that user behavior may not be tracked until they consent. I can’t be sure on this, but you can check this with the support team for your plugin. I did have to enable consent here from an EEU country. This isn’t a Site Kit configuration, but do perform some checks on this or ensure events are firing with any consent management plugin temporarily deactivated.

Thanks for the update @giorge283. The problem isn’t present on my side when checking your site once more, see this recording. All is working as expected, with the add_to_cart and item details being recording in Google Analytics.
