On the AMP version of my site, some of the characters and images on the menu are being replaced and I don’t find any option to change that on AMP for WP settings. Can someone help me, please?

Do you have MBString enabled on your server?

Can you please check with your hosting company? if it’s not enabled, kindly ask them to update it.

Yes, we enabled yesterday but the characters are still being replaced

In that case, you need to file a bug report on https://github.com/ahmedkaludi/accelerated-mobile-pages/issues/

and our development team will try to debug it on our end.
