I heard back from MailPoet tech support. They said:
We understand this must be frustrating to you, and our dev team is already aware of this issue.
The cause is likely related to the MySQL version you are using. We started using some features that MySQL 5.5 doesn’t support.
For now, you should be able to roll back to an older version of the plugin (3.62.0) to have the correct link URLs and the detailed stats rates.

But to have it permanently fixed, we strongly suggest asking your web hosting to upgrade your MySQL version.
Same Problem here. Update of the MySql-Server didn’t resolve the problem.

Hey everyone,
We’re aware of this issue, and it happens only if you’re using an older version of MySQL.
MailPoet requires MySQL version 5.5 or higher. We strongly recommend upgrading to MySQL 5.7 or anything that is currently supported.
Once you update it, please disable and reactivate the plugin to force the migrations, so the stats should show up again.
