Problems with Text mails

When I activate the plugin and modify with the customizer the mail design, everything seems to be fine … mails from woocommerce are also fine …

BUT when you switch to text view within the mail agent, the Mail looks really bad and ugly … some fields are misplaced and so on …. when you try to edit the themes by woocommerce/settings/eMails and therefore switch e.g. to multipart, you can copy and change the plain text template BUT these changes will not be reflected in the mails you send … it seems that these templates are simply ignored …
