Even though the option is not ticked:
“Add product identifiers to structured data markup on WooCommerce product pages. According to Google’s requirements, product identifiers will also be added to the HTML shown to visitors.”

The plugin still outputs any matched Product Identifiers for GTIN etc to the product page front end after the meta information.
