Profile Form Inputs Randomly Disabled

Hi,
I have a user profile page where they can set default settings/preferences.
This was working fine, up until recently. However now, some inputs are fine- others are disabled- there appears to be no rhyme/reason to which is enabled/disabled (all my inputs are dropdowns).
Within the form I have set it so the user can edit these inputs- I have not changed anything in the past days- this is not a cache issue either. What is going on?
The profile page is 99% of the reason I use this plugin.
Also secondarily- how can I get the user profile settings to display after the user saves changes? The changes go through, but the page goes blank once saved. (Not as urgent)

Just for context, I am running 2.6.8- and suspect the change occurred upon upgrade to this version.
I can create some js code, that enables all the inputs on the user page- but not keen to have to maintain little scraps of random code for this kind of stuff.
I should flag that the inputs are editable for me as admin, but only some are for users. All inputs had been editable by users previously and no changes occured on my side. They are simple dropdowns of numbers/text.
The same ones are disabled/enabled each time- but can’t find any logic for why any of them are disabled- or how any inconsistency can exist.
I’ve checked the field settings and they are all identical,
- All Dropdown fields
- “Can user edit this field” is checked
- is this field required unchecked
- Only visible to profile owner and users who can edit member accounts
- Parent option- not selected
- Visibility- view everywhere
As admin everything is fine, as a user some work, some don’t and all had previously been working up until recent updates.
