Not really sure what you mean by setting up plugin on multiple store can you please add more details on that one?
You can have multiple services and multiple services providers working on one or more services.
As for having a flex schedule if you mean each worker having different working hours then yes this is possible, in case you mean to have flexible times for each booking slot then this is unfortunately not possible, you can set service duration per service so every slot is going to have the same duration if that makes sense.

I think, do we need buy plugin for each store separately, because we have more stores end all have individual web page

No, you do not have to purchase plugin multiple times for different sites. You can use it on as many sites as you wish.
