Quick overview?

I would simply like a quick functional overview of how this process works.
I’ve downloaded a new theme. In order to rebuild my site on the the new theme, I assume I have to Activate the new theme in the WP Admin portal, in order to work on it with full options control.
Since activating the new theme would make that working version “live” while I’m screwing with it, I activate your plugin, then activate the new theme, then work on the new theme in the background, while your plugin displays “Under Construction” to the billions of users accessing my site(!). When I’m done creating the new theme, I disable your plugin, and my new site becomes “live”. Have I got that right?
However, what if I screw things up with the new theme, or it takes longer than I intend, and I don’t want to have an Under Construction page visible for, like, four weeks? Can I save the work that’s been completed on the new site, re-activate my original site, and then disable your plugin, thereby restoring the original site as the “live” version, while I figure out what to do with the new design?
I understand this may be a question WP has to answer. Thanks for any perspective you can provide!
