Everything with the plugin is working great, but for some reason the random order isn’t working even though I have the option selected in the widget settings. Any ideas?

Are you sure that the widget option for random is checked?

If you’re just doing so in the Global settings panel it won’t work once you’ve created the widget. The widget inherit the global settings once and that’s it.

Also, are you hosted on WPEngine or another by chance? They prevent random ordering by default. You can change in your WPE control panel.
