Recipe Microformatting Issues

I currently use the plugin, Easy Recipe, to format my recipes for Google with the recipe microformat schema. It works great for mobile and desktop but AMP seems to be over stripping (sanitizing) the recipe formatting that the plugin outputs. I am using WPtouch’s AMP extension which utilities your AMP core files.

I have contacted Easy Recipe support to see if there will be an update to fix this issue. In the meantime, I wanted to ask if Is there a way to edit one of the AMP sanitizers to fix this issue?
