Reference of shortcode params

We are using Elementor and can’t get to the shortcode widget / builder that are referred to in all documentation. There’s one or two dropdowns, but nothing like the widget that appears in TinyMCE. Outside of Elementor, I’ve been able to “build” a shortcode in Gutenberg, but can’t actually see the shortcode being generated to copy/paste it.

Do you have a developer reference document of all available parameters so we can custom build shortcodes as needed?
