To edit the placeholder text, please go to wp-admin> Ultimate Member> Forms> Edit a Registration Form> Edit a E-mail field> See Placeholder. You can edit the placeholder text. Here’s a screenshot: https://screenbud.com/s/bvxN1Ay3seN

We would like to know which form are you referring to? Profile Form or Registration Form?
UM creates a cache every time you update or save details in the profile or register forms, try to clear the user cache in wp-admin> Ultimate Member> Dashboard and click the “Clear Cache of n users button.”
Please also check if your browser autofill is turned on.
I think I found the problem. I’m adding the shortcut per elementor. My e-mail address will then be inserted there as a placeholder. When I insert the shortcut in the classic editor, the placeholder that I stored in the form appears

Is it an auto-fill issue? Where your browser auto-fills the email address field?
I duplicated the standard registration form and added 2 fields.

I tested it with Chrome, Edge and Firefox. The address appears everywhere

Sorry for the late response.
Have you made any code customizations with UM hooks? If so, please try disabling them and see if this is causing the issue.
