Remove numbers after category

I would like to remove the FAQ count (the number in parentheses) that appears after the category name. Is this possible?

I understand that categories are alphabetically ordered, but was wondering if there is a way to reorder categories without changing the name. I’m using numbers at the beginning as a quick hack, but all the numbering looks confusing and I would prefer to just have the category title:
