Removed plugins remove from capabilities

Hi I have been removing old plugin data in the phpmyadmin database and also the options it leaves behind. If I do a search for an old plugin it shows up still for capabilities, so how to remove the old ones from your plugin please. The list is so huge for the capabilities.
I removed some and then couldn’t access the site.
