Sorry, but I’m not sure if I understand why you’d need to “reset previous exports”. Can you please elaborate on that?

You could temporarily disable the “Only export Products once” option to export everything again, then re-enable it.
As for rolling back to specific runs of the export, I’m afraid it’s not currently possible.
