Return One Random Post from Category – Possible?

I think you could do this just by adding your own code to a pre_get_posts filter

however note that this will affect all instances of the CPT archive..
Say you do this:

if( is_tax('mytax') ){

	$query->set('posts_per_page', 1);
	$query->set('orderby', 'rand');
}

that will also affect anyone visiting the taxonomy archive.
