Hey Pooledge,
The variables you’re referring to should actually be getting retrieved from the field names that are set in your MailChimp list.
So for example, to change “Email Address” to “Email Adresse”, you’ll want to login to your MailChimp account and make that change in the Form Builder of your MailChimp list.
To access the Form Builder, login > click on the Lists tab > navigate to your list in question > click the gear/cog icon on the far-right > then select “Forms”. From there, click on the Email Address field and edit the “Field Label” on the right-hand side. Then, save.
In order to have your field label changes update in WordPress, you’ll need to go into your plugin’s settings (WP Dashboard > Plugins > MailChimp > Settings), then click on “Update List” at the top of the page. You should see those field labels updated.
