Yes, tasks within a sheet/event can have start and stop times. That is a basic feature of the plugin. You can set up as many tasks, with their own times, for a sheet as you want, and decide how many volunteers you want to sign up for each, or you can even sign them up yourself as admin user if you want to “assign” them.
You can display as much or as little on the calendar extension as you want. If you have a lot of time slots, it might not fit well in the calendar view, but you can set it to show the details in a pop-up window that will show all the details.
