Few things to note here:
1. This page (https://naturebathing.co.uk/directory-category/) is set as your Single Category page (using the shortcode or elementor widget), right? This page is meant for a reference point for your actual Single Category pages (like: https://naturebathing.co.uk/directory-category/apps/). So that page is not meant for any specific categories and naturally there isn’t any meta tag that refers to a particular category.
2. Single Category pages (like: https://naturebathing.co.uk/directory-category/apps/) are automatically created, depending on the categories you have. This pages doesn’t work with third-party SEO plugins, but it should work with Directorist SEO. So if you have Dirctorist SEO turned on, it should assign correct OG:Title and OG:URL.
If you’re having issue on some specific single category pages, with Directorist SEO turned on, kindly provide us the link to them, we’ll look into it.

I have switched Directrorist SEO on and left fields blank on tow sites.
Both have category descriptions
https://www.whatclassiccar.co.uk/directory-category/auctions/
https://naturebathing.co.uk/directory-category/youtube-channels/
I have checked both in Facebook debug and meta looks wrong.

Thank you for the confirmation. This could happen for a number of reasons, without more thorough testing it is hard to identify what actually is causing this.
If you’re comfortable enough to modify some codes, could you modify the class-seo.php (directorist/includes/classes) file and give a greater priority to these underlined ones (just set the value as seen on the screenshot) and see if it resolves the issue?
