it appears that when the screen options are checked and the featured image is checked, the featured image box will appear in right sidebar under the update button. When the update is done, the featured image block is hidden or not available.

Please try unchecking and checking again the featured image in the screen options. That should bring the meta box back.

That sometimes works but not often. The featured image box only appears for a product with no variations as far as I can tell. With variations the image is input to each variation.

But why would you even need a featured image? MarketPress does not use a featured image

in v 29.5.6 there is a product image box in the right side of product screen. It says Set Featured Image or Remove Featured image if one is set. In 3.2.7, that box will sometimes appear if you fiddle with the screen options image check box but not always. Otherwise the image box is in a different place or if a variable product each variation gets it own image. I just remembered the link text is all.
