That’s odd.

You can perform a conflict test:

• Temporarily switch your theme to Storefront
• Disable all plugins except for WooCommerce
• Open again the product tab that is having the issue on the backend

If the issue is not present it means it was a conflict affecting the site, and you can then reactivate the theme an plugins gradually one by one until the cause of the issue is found, You can find a more detailed explanation on how to do a conflict test here.
