Shipping Date? Weight?

Is there a way to switch the Shipping date to The next day?
If I print the Delivery Notice the day before it puts the date of that day not the next day I ship it.

Also is there a way to make it not print Weight on the Delivery Notice? I have a field I created for Size I use.
