Based on the screencast you shared, I can see that you are using the Elementor plugin in building your Shop and Checkout pages in which you are encountering some inconsistencies, correct?
Since you’re using a third-party plugin that we don’t provide support for based on our Support Policy, I recommend that you reach out to the developers of the plugin for further assistance. They will be better equipped to help you resolve any issues you’re experiencing with the plugin.

Can you please try to switch to the default Storefront theme and only WooCommerce plugin is enabled and see if this works?
If so, then this kind of problem is usually caused by your theme or a third-party plugin present on your site. We can run a conflict test to verify this. I’d recommend cloning your site to a staging environment and performing the tests described on this guide without modifying your live site or impacting customers. Many hosts provide staging facilities, so it’s worth checking in with them. It’s also possible to do it using the free WP Staging plugin.
If this was caused by a third-party plugin present on your site, it would be best to reach out to the developers for further assistance here.
If this did not resolve the issue, please provide the fatal error logs (if any) under
WooCommerce > Status > Logs.You could copy and paste your reply here or paste it via https://gist.github.com/ and send the link here.

I have confirmed the issue is definitely between Elementor and Woocommerce. I have support from Elementor helping me as well. Yet thought I’d paste this info in case it means something to you. It was from within Status => Logs:

The issue remains that when woocommerce is activated the shop page, and only the shop page, will not load to edit and product content that is not added to the page appears on it when the page is live.

Thank you for sharing the screencast.
The WooCommerce shop page doesn’t need a shortcode, once assigned fromWooCommerce > Settings > Productit starts behaving as the product archive page.
So for example if you add the All Products block to the page, you’ll see two sets of products rendering, the one by default and the ones from the block which I assume is similar to what’s happening.
As mentioned above third-party integrations are not within our scope of support so reaching out to Elementor was the right thing to do.Please let us know if you have any WooCommerce-related questions.
Ok, thanks for the assistance. But is it possible to use the woocommerce cart and checkout shortcode, which are required, and use my preferred cart and checkout designs not using woocommerce? I notice adding the woocommerce shortcodes forces the use of the carts and checkout forms.
