The settings are now managed on each post / page within the YOAST SEO settings. Click on the little gear symbol.
Its been a bit annoying to reset every sitemap exclusion again and manually.

the method you suggest just “toggles” a single post’s visibility on a sitemap.
@lupet92, the real useful settings can be found on “Search Appearance” page: /wp-admin/admin.php?page=wpseo_titles
“Show Posts in search results?” = include this post type in sitemap_index.xml

In the past (before Yoast SEO 7.0), noindexing URLs and removing them from the sitemap was done separately, although they were pretty much serving the same purpose.
Now, when you noindex a URL (or a taxonomy, archive, etc.), it also gets removed automatically from the sitemap.
@eccola-www’s answer is correct. Selecting No for “Show X in search results?” will add the robots noindex tag and remove it from the sitemap.
