Once someone has selected Amazon Pay, they’re taken to the checkout page to select their payment information. At that point, the process is complete.
It is possible to do that on one page using an extension One Page Checkout, although your customers would still need to select their billing and shipping information before submitting.

I do have another question:
When I use amazon pay on the cart page and login into my amazon page I get redirected back to the checkout page where I select payment method and address.
Now when I go back to the cart page for example and click the usual “proceed to checkout” button I am again in the amazon checkout where I select payment method and address of my amazon account. So basically that means I am stuck and cannot change to a different payment method like paypal.
Is that intended? How can I change it?

That is intended, as once they select Amazon Pay and log in to their account, Amazon Pay essentially takes over your checkout with the Amazon checkout flow.
There’s not really a way to change how that works without completely rewriting the plugin
