In general the Sort by dropdown is a widget and you can create and configure it in widgets. You can find more about it here https://filtereverything.pro/resources/sorting-widget/
The date sorting parameter is available in the widget options. Price, if it is ACF field can be created as Post meta num sorting option and you should use the same meta key as for appropriate ACF field.

@andygroove the Sorting widget is available from v1.3.0 Please, update the plugin.
About Select2, it seems you have JavaScript error or maybe conflict with other plugin, uses Select2.
Provide me please with URL to the page, where you have the problem, I could say what is the reason.
